Cheesy Sausage Potato Breakfast Casserole

Ingredients
  

  • 1 Bag Frozen cubed country-style potatoes
  • 1 lb regular breakfast sausage cooked and drained
  • 1 1/2 cups cheddar cheese blend
  • 1/2 cup Gruyere/swiss blend
  • 12 Eggs
  • 2 cups milk
  • 1/2 tsp red pepper flakes
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper

Method
 

  1. Preheat oven to 350 degrees. Lightly spray a 9x13 inch pan with cooking spray.
  2. In a large skillet, cook sausage until no pink is present. I like to brown it a little and that adds a ton of flavor. Drain fat and set aside.
  3. In a large bowl, add potatoes, sausage, and cheeses. Mix together.
  4. Whisk together the eggs, pepper flakes, smoked paprika, garlic powder, salt, pepper, and milk. Pour over potato mixture.
  5. Bake uncovered for 60-70 minutes or until eggs are set and edges are slightly browned. Serve and enjoy!

Notes

  • You can make this casserole ahead of time and refrigerate or freeze for later. 
  • To bake from frozen, let thaw completely and bake as directed.
