- Grease an 8x8-inch baking pan.
- In a bowl, whisk together the eggs, brown sugar, baking powder, vanilla, cinnamon, and salt.
- Mix in the melted butter and milk. Stir in the oats until combined.
- Pour the mixture into the prepared pan, cover with foil or plastic wrap, and let sit in the fridge overnight or for at least 1 hour. (We like to make it at night and allow for all of the yummy flavors to mix together and soak in overnight)
- Let the pan sit at room temperature while preheating the oven to 350 degrees.
- Bake uncovered for 30 minutes, or until set in the middle.
- Serve warm with chocolate chips, brown sugar, craisins, or maple syrup. Pair it with sausage links and strawberries for a full breakfast.
