Cozy Camp-Inspired Baked Oatmeal Recipe for Fall Mornings

This cozy camp baked oatmeal is soft, perfectly spiced, and kid-approved. Make it ahead for a warm fall breakfast with endless customization ideas and toppings.

Ingredients
  

  • 2 large eggs
  • 1/2 cup packed brown sugar
  • 1/2 TBSP baking powder
  • 1/2 TBSP vanilla
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup melted butter
  • 1 1/4 cup milk
  • 3 cup rolled oats

Method
 

  1. Grease an 8x8-inch baking pan.
  2. In a bowl, whisk together the eggs, brown sugar, baking powder, vanilla, cinnamon, and salt.
  3. Mix in the melted butter and milk. Stir in the oats until combined.
  4. Pour the mixture into the prepared pan, cover with foil or plastic wrap, and let sit in the fridge overnight or for at least 1 hour. (We like to make it at night and allow for all of the yummy flavors to mix together and soak in overnight)
  5. Let the pan sit at room temperature while preheating the oven to 350 degrees.
  6. Bake uncovered for 30 minutes, or until set in the middle.
  7. Serve warm with chocolate chips, brown sugar, craisins, or maple syrup. Pair it with sausage links and strawberries for a full breakfast.

Notes

Store in an airtight container for 2-3 days.
