Gut Healthy Roasted Chicken with Fresh Herbs and Turmeric

Ingredients
  

  • 1 whole chicken (about 4-5 lbs)
  • 2 TBSP olive oil
  • 2 tsp ground turmeric
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 3-4 sprigs fresh rosemary chopped
  • 3-4 sprigs fresh thyme chopped

Method
 

  1. Preheat your oven to 300°F and grease a roasting pan.
  2. Pat the chicken dry with paper towels. This helps the skin get nice and crisp.
  3. Rub the chicken all over with olive oil, turmeric, salt, pepper, and fresh herbs. Make sure to season under the skin where you can.
  4. Place the chicken in a roasting pan, breast side up. Add a little water to the bottom of the pan.
  5. Roast for about 3 ½ to 4 hours, basting occasionally with its own juices, until the internal temperature reaches 165°F.
  6. Let rest for 10-15minutes before carving.
