The Perfect Zucchini Side Dish

Ingredients
  

  • 4 Zucchini- quartered lengthwise
  • 1/2 Cup Grated Parmesan
  • 2 Tsp Chopped Chives (Or 1 tsp garlic powder)
  • 1 TBSP Olive oil
  • Salt and pepper to taste

Equipment

  • 1 Cast Iron Skillet or Baking Sheet
  • 1 Medium Bowl

Method
 

  1. Preheat oven to 400°F. Chop and quarter 4 zucchini lengthwise.
  2. In a medium bowl, combine zucchini, chives or garlic powder, olive oil, salt, and pepper. Mix well so the ingredients are well combined and zucchini pieces are evenly covered.
  3. Place in a cast iron skillet or ona sheet pan. Bake for 15-20 min until tender and golden. Enjoy!
