Made From Scratch Crunchy Granola
I am always on the search for the perfect breakfast meals, especially when they are full of health benefits. This made from scratch granola recipe checks all of the boxes and makes an excellent choice for your morning routine. It is easy to make, nutritionally dense, and a very satiating meal even your kids will love!

It is the perfect easy breakfast.
You can eat it with milk in place of sugar-filled and overly processed commercial cereals you find at the grocery store. It is also wonderful with yogurt as it adds the best crunch. I have even had it on top of ice cream. That may seem odd to some, but trust me….chef’s kiss..
If you are looking for a quick pick-me-up snack, grab a handful! Add in some dried fruit, seeds, and nuts and you have a great trail mix!

Oats– contain a fiber called beta-glucan that helps lower cholesterol, reduces risk of heart disease and diabetes, and promotes healthy gut bacteria Oats are also rich in magnesium, copper, thiamine, zinc, manganese, phosphorus, iron, folate, and vitamin B5
Cinnamon– It can help lower blood sugar in people with diabetes and helps in improving insulin sensitivity (for my fellow PCOS cysters this is GOLD!) It is high in antioxidants which help protect against aging, disease, and inflammation. As if that wasn’t good enough, Cinnamon may also protect your dental health, lower blood pressure, improve your gut health, and lower cholesterol. It really is a super spice!
Honey– Honey is well-known for its health benefits. It is rich in antioxidants, a natural anti-inflammatory, anti-bacterial, improves heart health, supports healthy gut microbiome, aids in diabetes management, and other diseases. You can read more on the many benefits of honey here.
Coconut Oil– Coconut oil is rich in MCT’s that can help with digestion by fighting bacteria, fungi, and parasites. It can also help absorb fat-soluble vitamins, minerals, and some amino acids.
It does not last long in our household.
This made from scratch recipe has become a weekly staple in our house. We were buying bags all of the time at the store and it was starting to get a little pricey. Because of this, I was on the search for the perfect homemade granola recipe. I usually double the batch and we are still paying a fraction of what we were paying at the store. The taste is much better and it does not have a bunch of artificial ingredients. I know you and your family will love it!
How to Make Made From Scratch Crunchy Granola
First, you are going to combine rolled oats and cinnamon. This recipe can be enjoyed just like it is but you can also add seeds, nuts, chocolate, coconut flakes, or anything your heart desires!
Then ,in a separate bowl, you will melt your coconut oil, add in honey, and reheat it to allow for the two to blend even better. You can also use pure maple syrup in place of honey for a slightly different flavor.
Add in the coconut oil and honey mixture to the bowl with your oats and cinnamon. Pour in vanilla and mix well. I personally LOVE homemade vanilla but any vanilla will work perfectly!
Next, line your pan with a silicone baking mat or parchment paper and spread the oat mixture evenly on a raised edge sheet pan. Make sure it is a thin layer to ensure the granola is evenly crunchy throughout. Then, it is time to bake! Your house is about to smell so dang good!
Why is my granola not crunchy?
While the granola is still warm, it may still be soft to the touch. It will, however, harden as it cools. Give it at least 30 minutes then break it up. I like mine with clusters but you can break it up into as small of pieces as you like!

Made From Scratch Crunchy Granola
Ingredients
- 2 Cups Rolled Oats
- 1 tsp Cinnamon
- 1/4 Cup Coconut Oil
- 1/2 Cup Honey or Maple Syrup
- 1 TBSP Vanilla
Instructions
- To start, preheat your oven to 300 degrees. Line a raised-edge sheet pan with parchment paper or silicon baking mat.
- In a large bowl, combine your rolled oats and cinnamon.
- In a separate bowl, microwave your coconut oil for 30 seconds or until fully melted. Stir in your honey and microwave for an additional 30 seconds. Whisk together.
- Add the oil and honey mixture to your dry ingredients, then pour in the vanilla. Mix well to evenly coat the oats.
- Pour granola mixture onto a sheet pan and spread evenly. You will want to make sure you spread it out to a thin layer to get even baking and maximize the crunchiness.
- Bake for 25 minutes or until the edges are starting to gain a little color. Let cool for at least 30 minutes, then break into pieces. Store in an airtight container for up to 2 or 3 months (although I am sure it will NOT last that long!)
