Easy, Moist Homemade Meatloaf (Our Cozy Family Recipe)

A simple, moist homemade meatloaf recipe made with 2.5 lbs of meat, ketchup glaze, and pantry ingredients. Includes substitutions for beef, chicken, turkey, or venison.

Ingredients
  

  • 2 1/2 lbs ground meat (half chicken & half beef is our favorite)
  • 3/4 cup chopped yellow onion
  • 3/4 cup chopped bell pepper (any color, I used yellow)
  • 1 1/2 cups breadcrumbs or oats
  • 2 whole eggs, lightly beaten
  • 3 TBSP Worcestershire sauce
  • 1 TBSP dry mustard
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
For The Sauce
  • 3 cups ketchup
  • 1/3 cup brown sugar
  • 1 tsp dry mustard
  • 2 TBSP Worcestershire sauce

Method
 

  1. Preheat your oven to 375°F and lightly grease your baking pan or dish.
  2. In a medium bowl, combine all sauce ingredients, stir well, and set aside.
  3. Beat the eggs in a small bowl and set aside.
  4. In a large bowl, combine all meatloaf ingredients with clean hands. Mix just until combined. DO NOT OVERWORK MEAT.
  5. Shape the mixture into a loaf in your prepared baking dish.
  6. Bake uncovered for 1 to 1 1/4 hours, or until the internal temperature reaches 165°F.
  7. In the last 5–10 minutes, spread the sauce evenly over the meatloaf.
  8. Optional: Broil 1–2 minutes for lightly browned, bubbly sauce. Watch carefully to prevent burning.
  9. Let rest for 5 minutes before slicing. Serve with mashed potatoes and your favorite vegetable.
