In our home, we love making this meatloaf with half ground beef and half ground chicken, but I will walk you through plenty of options so you can make it your own.

Ingredients (for a large, family-size meatloaf)
Meatloaf
- 2 1/2 pounds ground meat
- We usually do half ground chicken and half beef, or half chicken and half venison
- 3/4 cup chopped yellow onion
- 3/4 cup chopped bell pepper (any color works, I used yellow)
- 1 1/2 cups breadcrumbs or oats
- 2 whole eggs, lightly beaten
- 3 tablespoons Worcestershire sauce
- 1 tablespoon dry mustard
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Sauce (for topping)
- 3 cups ketchup
- 1/3 cup brown sugar
- 1 teaspoon dry mustard
- 2 tablespoons Worcestershire sauce

How to Make This Easy Homemade Meatloaf
- Preheat your oven to 375°F.
- In a medium bowl, combine all of the sauce ingredients, stir well, and set aside.
- Lightly spray or grease your baking pan and set aside.
- Lightly beat the eggs in a small bowl and set aside.
- In a large bowl, combine all of the meatloaf ingredients with clean hands. Mix just until combined. Do not overwork the meat.
- Shape the mixture into a loaf in your prepared baking dish.
- Bake uncovered at 375°F for about 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 165°F in the center.
- In the last 5 to 10 minutes of cooking, spread the prepared sauce evenly over the top of the meatloaf.
- Return to the oven and broil for 1 to 2 minutes at the very end if you want the sauce lightly browned and bubbly. Watch closely so it does not burn.
- Remove from the oven and let the meatloaf rest for about 5 minutes so the juices redistribute.
- Slice and serve with mashed potatoes and your favorite vegetable.

Substitutions and Variations (Make It Your Own)
Here is where this recipe really shines, it is wonderfully flexible.
Different Meats You Can Use
- 100 percent ground beef for a richer, more traditional meatloaf.
- Half beef and half ground chicken, our favorite combination, lighter and tender while still full of flavor.
- Ground turkey for a leaner version that still holds together well.
- Ground venison, especially good mixed with a little beef for moisture and depth.

No Worcestershire? No Problem.
If you are out, you can substitute equal parts soy sauce or liquid aminos in the exact same measurement. It gives a very similar savory depth.
Oats vs. Breadcrumbs
We usually use oats for a soft, tender crumb, but breadcrumbs work just as well.
If you want to add extra flavor, this is a perfect place to use your own seasoned breadcrumbs made from your sourdough croutons. Simply blend them up in the blender or food processor, and use them in place of the oats. They add a lovely herby, rustic touch to this simple family meatloaf.
