Ingredients
  

  • 1 1/2 cups Ripe Banana (About 3 bananas) Mashed
  • 1/2 cup nut butter of choice (peanut, almond, or cashew work beautifully)
  • 2 cups Rolled Oats
  • 1 tsp Cinnamon
  • 1 tsp Vanilla Extract
  • 3 TBSP Pure Maple Syrup
  • 1 cup Dark Chocolate Chips Optional
  • 1/2 tsp Salt

Method
 

  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. In a large bowl, mash the bananas until smooth.
  3. Add the nut butter, maple syrup, vanilla, and salt and stir until everything is well combined.
  4. Mix in the rolled oats and cinnamon, folding until fully incorporated.
  5. Fold in the dark chocolate chips, leaving a few for topping if you like a pretty finish.
  6. Press the mixture evenly into your prepared pan.
  7. Bake for 25 to 30 minutes or until the edges are lightly golden.
  8. Cool completely before slicing into bars. Store in an airtight container for up to 5 days or freeze for longer storage.
