A Little Story From Our Life
Over the last year, Jason and I have been working nonstop on The Manor, our dream renovation project about an hour from where we currently live. Between trips back and forth and all the projects we have been tackling, meal planning has sometimes felt impossible.
When you are on the go that much, it is tempting to eat out constantly but we noticed it was taking a toll on our health and our budget. That is why these bars have been such a lifesaver for us. They are easy to prep, wholesome, and totally grab-and-go, so we can refuel during long days of sanding, painting, or hammering without missing a beat.
These little bars have become our project-day snack of choice, and I love that they are something nourishing I can feel good about.
Ingredients
- 1 1/2 cups mashed bananas (about 3 ripe bananas)
- 1/2 cup nut butter of choice (peanut, almond, or cashew work beautifully)
- 2 cups rolled oats
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 3 tbsp maple syrup
- 1 cup dark chocolate chips
- 1/2 tsp salt

Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, mash the bananas until smooth.
- Add the nut butter, maple syrup, vanilla, and salt and stir until everything is well combined.
- Mix in the rolled oats and cinnamon, folding until fully incorporated.
- Fold in the dark chocolate chips, leaving a few for topping if you like a pretty finish. I also added chia seeds for extra nutritional benefits.
- Press the mixture evenly into your prepared pan.
- Bake for 25 to 30 minutes or until the edges are lightly golden.
- Cool completely before slicing into bars. Store in an airtight container for up to 5 days or freeze for longer storage.
