I love love loooove this recipe because it yields perfect cookies every single time. Throughout the years I have continued to experiment with chocolate chip cookie recipes. Many were good but I never felt like I had truly found “the one.” A lot of them turned out too cakey, or too thin and crispy. I wanted a chocolate chip cookie recipe that created the perfect crisp on the outside and a delectable soft, gooey center. I finally found this recipe for the perfect cookie and I am so excited to share it with you!
A Surprise Ingredient
Most chocolate chip cookie recipes are very similar. You have the butter, the sugars, the eggs, the vanilla, then add in the mixture of flour, baking soda, and salt. There is a secret ingredient in this recipe that is so vital to creating the perfect texture that truly makes this the only chocolate chip cookie recipe you will ever need……….APPLE CIDER VINEGAR! Yes, you read that correctly. ACV is the super hero ingredient that makes this recipe so amazing.
What does Apple Cider Vinegar Do in Baking?
Apple cider is a hero ingredient when it comes to baking for the following reasons:
- It Improves Leavening. Because of the acidic nature of ACV, it makes the baking soda and baking powder more effective. The dough will have a better rise, creating fluffier cookies.
- Creates a Soft, Moist Crumb. Because ACV is acidic, it can hinder the gluten from forming leaving you with a more soft and delicate crumb.
- Creates a Deeper Flavor. Apple cider vinegar can enhance the flavor in many baked goods.
- Builds a beautiful texture. Apple cider vinegar in cookies will create a more delightful texture. The outside will be nice and crisp with the inside being soft and airy, perfect for milk to seep into those precious air pockets!
How to Make
First, warm your butter until it is barely melted and set aside.
Combine Flour, Baking soda, and salt in a small bowl. Set aside.
Next, in a stand mixer, combine the butter, sugars, vanilla, and apple cider vinegar. Mix until smooth.
Mix in the egg until just combined.
Now add in the best ingredient, THE CHOCOLATE!! I use dark chocolate morsels.
Place in the fridge and chill for 30 minutes. This will help the dough properly set up.
Now, with a cookie scoop or spoon, drop tablespoonfuls of the delicious cookie dough on a cookie sheet lined with parchment paper or silicone mat. I like to use this one.
Bake at 375 degrees for about 9-11 minutes or until the edges are golden brown. The centers will look slightly undercooked but will finish cooking as they cool.
Remove from the oven and allow to cool on the cookie sheet for at least one minute before moving them to a cooling rack.

Top them with course sea salt for a salty and sweet combination. This past Christmas I chopped up some peppermint bark and it added a nice mint chocolatey flavor. - 1 Stand Mixer
Ingredients
- 2 cups All Purpose Flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup butter- barely melted but not too hot
- 3/4 cup light brown sugar- packed
- 2/3 cup granulated sugar
- 2 tsp vanilla
- 1 tsp Apple Cider Vinegar
- 1 large egg
- 2 cups chocolate chips or add-ins of your choice
Instructions
- In a small bowl, heat the butter in a microwave for about 20 seconds until it is soft and slightly melted but not fully. Set aside to cool.
- In a medium bowl, mix together the flour, salt, and baking soda. Set aside.
- In a stand mixer, combine the sugars, butter, vanilla, and apple cider vinegar. Beat until smooth.
- Add in the egg and mix until just combined. Stir in the chips and other add-in of your choice.
- Chill the dough for 30 minutes. Then, using a cookie scoop, drop by rounded tablespoons onto a parchment or silicon mat lined baking sheet spacing each cookie 3 inches apart.
- Bake at 375 degrees for about 9-11 minutes. The edges will be golden brown and the middles will look slightly underdone. They will continue to cook while cooling.
- Allow to sit for one minute on the cookie sheet before moving to a cooling rack. If you are sprinkling sea salt on top, now is the time to do that. Enjoy!!
Notes
- Store in an airtight container for up to 4 days or freeze for longer storage.
- You can store the cookie balls in the freezer for later baking.
- Adding a slice of bread into the container with your cookies will keep them from drying out in the refrigerator.
