Ingredients for The Perfect Zucchini Side Dish
- 4 zucchini, quartered lengthwise
- 1/2 cup grated Parmesan
- 2 tsp chopped chives or 1 tsp garlic powder
- 1 tbsp olive oil
- Salt and pepper to taste
How to Make
- Preheat Oven to 400° F. Quarter the zucchini lengthwise and place in a medium bowl.

2. Add in olive oil, salt, pepper, and chives (can also use garlic powder.) Mix well so the ingredients are well blended and the zucchini are well covered.

3. Place in a cast iron skillet or on a baking sheet, top with parmesan cheese . Bake for 15-20 minutes or until, tender and golden.
4. Serve with your favorite main courses along with a slice of fresh sourdough bread and enjoy!
Store in an airtight container in the fridge for up to 4 days or freeze for longer storage.

- 1 Cast Iron Skillet or Baking Sheet
- 1 Medium Bowl
Ingredients
- 4 Zucchini- quartered lengthwise
- 1/2 Cup Grated Parmesan
- 2 Tsp Chopped Chives (Or 1 tsp garlic powder)
- 1 TBSP Olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F. Chop and quarter 4 zucchini lengthwise.
- In a medium bowl, combine zucchini, chives or garlic powder, olive oil, salt, and pepper. Mix well so the ingredients are well combined and zucchini pieces are evenly covered.
- Place in a cast iron skillet or ona sheet pan. Bake for 15-20 min until tender and golden. Enjoy!
