Ingredients
- 1 whole roasting chicken (4 to 5 pounds)
- 4 tablespoons unsalted butter
- 1 and a half tablespoons minced fresh sage
- 2 garlic cloves, minced or smashed
- 1 crisp apple, cored and cut into wedges
- Salt and pepper to taste
- fresh rosemary and thyme (optional)
These ingredients are simple, wholesome, and allow the natural flavors of the chicken and apple to shine.

Instructions
- Preheat your oven to 450 degrees Fahrenheit.
- Melt the butter in a small saucepan over medium-low heat. Stir in the minced sage until fragrant.
- Rinse the chicken and remove any giblets. Pat it very dry. A dry surface helps the skin become crispy during roasting.
- Brush the sage butter all over the chicken, including inside the cavity. Season generously with salt and pepper.
- Place the apple wedges and garlic inside the cavity of the chicken. If you have kitchen twine, tie the legs together to help the chicken cook evenly. I used these long toothpicks and they work great!
- Place the chicken in a roasting pan and roast for about 1 hour. Baste the chicken every 15 minutes with the pan juices.
- When the internal temperature reaches 165 degrees Fahrenheit, remove the chicken from the oven. Let it rest for 10 minutes before carving.
The result is a golden roasted chicken with rich flavors from the sage and a subtle sweetness from the apple. It is simple, feels special, and SO satisfying!

Serving Suggestions
This roasted chicken pairs beautifully with a variety of sides. Some of my favorites include:
- Creamy mashed potatoes that soak up the pan juices
- Roasted vegetables, such as my Butternut Squash with a brown butter glaze or carrots, with a light drizzle of olive oil
- Homemade apple butter or apple chutney for extra warmth and flavor
- Warm, crusty from-scratch sourdough bread to serve alongside the chicken
These sides make the meal feel complete and welcoming for any time of the year.
Tips for the Best Roasted Chicken
Pat the Chicken Dry
Drying the chicken before roasting is key to getting that golden, crisp skin. Use paper towels to make sure the surface is completely dry.
Use Fresh Sage
Fresh sage makes a big difference in flavor. It brings a fragrant, earthy note that pairs beautifully with the apple and garlic.
Raise the Skin and Apply Herb Butter Directly On Meat
This really helps the meat absorb the flavors and keeps it moist and tender. You don’t want to skip this!
Let the Chicken Rest
Letting the chicken rest for 10 minutes after roasting allows the juices to redistribute. This makes the meat tender and juicy when you carve it.
