Simple Sourdough Breakfasts You Can Make All Week
There’s a rhythm I’ve fallen into in my kitchen lately, especially this time of year when mornings can go either way.
Some start slow, with a little extra time to move around the kitchen and enjoy it. Others feel rushed before the day even really begins. I’ve learned not to fight that, but to keep a handful of breakfasts I can rely on no matter how the morning unfolds.
I don’t make all of these every single week, but I find myself coming back to them again and again. They’re the recipes I reach for on quieter weekends, or even during the week when I want something homemade without putting too much thought into it.
Most of them begin with sourdough, and from there, it just depends on what sounds good that day.

A Quiet Morning in My Kitchen
A few mornings ago, I woke up before the house was fully light. The kind of morning where everything feels still for just a little longer than usual.
I walked into the kitchen, and my sourdough starter was sitting on the counter right where I left it the night before. I hadn’t made a plan for breakfast yet, but I didn’t really need one either.
That’s the part that’s changed for me.
I used to stand there and overthink it. Now I have a small handful of easy sourdough breakfast recipes I rotate through, and I just pick one based on how the morning feels. Some days I have time to bake. Other days I need something already made.
I don’t make all of these every week, but they are the ones I come back to again and again.
1. Sourdough Cinnamon Rolls (Same Day or Overnight Option)
These are easily one of my favorite things to make and is a top recipe on this blog!
If you’ve ever avoided cinnamon rolls because of the time, this recipe changes that. You can make them the same day without waiting around for hours, or you can let them rest overnight if you want to prep ahead.
That flexibility is what makes them work so well in real life.
They come out soft, warm, and just sweet enough. The kind of breakfast that is comforting and a little indulgent. Your kids will love this one!
When to make them:
Usually on a weekend morning or when you want something a little extra without a lot of planning.
2. Sourdough Biscuits with Turmeric Sausage Gravy
This is what I make when I want something savory and filling.
The biscuits are tender with that slight sourdough flavor, and the turmeric sausage gravy adds a richness that feels grounding. It’s a meal that sticks with you and carries you through the morning.
It’s honestly easy to make, but it feels like you put care into it.
When to make it:
On slower mornings when you know the day ahead will be full and you want something hearty to start with.
3. Sourdough Pancakes or Waffles (Discard Recipe)
This is one of the easiest sourdough breakfast recipes to keep in your routine! It is a regular in our home for sure.
If you have discard in the fridge, you’re already halfway there. The batter comes together quickly, and you can turn it into pancakes or waffles depending on what you feel like making.
Sometimes I keep them simple. Other times I’ll add sliced bananas or chocolate chips if I have them on hand. Freeze the leftovers and then just pop them in the toaster or oven for a quick breakfast on another day!
When to make them:
During the week when you want a warm breakfast but don’t have much time.
4. Sourdough Banana Bread
This is one of the most practical things I make.
It is soft, lightly sweet, and easy to grab when the morning feels rushed. I usually like to bake a loaf, cut it into slices and then neatly wrap them with plastic wrap.
They really don’t last long.
This bread is filling enough to count as breakfast, and the chocolate chips make it feel like something you actually want to eat. I love it with my morning cold brew!
When to make them:
At the beginning of the week so you have something ready to go on busy mornings.
5. Sourdough Sandwich Bread with Toast and Eggs
This is the simplest option, but it’s the one I rely on the most.
A slice of sourdough sandwich bread toasted with butter, maybe served with eggs. It’s steady, familiar, and always works.
There’s something about having homemade bread ready that makes everything else feel easier, plus that fresh bread smell is everything!
When I make it:
This is an everyday breakfast. If you are looking for easy, nutritious, and delicious, this one checks all the boxes.
Closing Thoughts
I don’t make all of these every single week, but they’ve become part of the rhythm of my kitchen.
Instead of trying to come up with something new every morning, I stick with what I know works. A few easy sourdough breakfast recipes, ingredients I already have on hand, and a little flexibility depending on how the day starts.
That alone has made mornings feel more settled.
