This recipe is full of protein, with meat that is tender, juicy, and perfectly seasoned. Serve it warm over mashed potatoes and a slice of made from scratch sourdough and it is the perfect cold weather meal.

This recipe is wonderful on an evening that you don’t want to spend an hour in the kitchen. This simple one pot recipe is dump and go – meaning you just dump all of the ingredients into the pressure cooker, set it, and walk away. Your meal will be ready in less than an hour and cleanup is a breeze.

What You’ll Need for Melt in Your Mouth Mississippi Pot Roast
- Chuck Roast or Pork Shoulder
- Butter
- Onion
- Hidden Valley Ranch Packet
- Au Jus Packet
- Peperoncini Peppers and Juice
- Optional- Baby carrots and Honey Gold Bite Sized Potatoes
- Instant Pot or Pressure Cooker

How To Make This Recipe
Sear Meat
Set the Instant Pot to SAUTE, drizzle a tablespoon of olive oil into the bottom, and sear the meat on all sides. This helps to hold in the juices and creates a bolder flavor. This step in optional but it does make a difference!
Layer the Ingredients
After searing, it is time to layer the ingredients. Place the meat flat into the pot. Slice the butter and place directly on the meat. Next, add your ranch packet and your Au Jus packet. Remove 2 or 3 peperoncini peppers and place on top of the roast. Pour 1/4 cup of the juice over the meat. Top with onion slices and place the lid on your Instant Pot.
Pressure Cook
Turn the pressure valve to the sealed position. Set your Instant Pot to Pressure Cook on HIGH for 45 minutes to an hour depending on the size of your roast.
Let the steam naturally release for 10 minutes before releasing the rest of the pressure. The meat should be tender and easily coming apart. If not, simply pressure cook in 10 minute increments until it is ready.

If you are adding in the carrots and potatoes, add to the pot after cook time is up and pressure cook for an additional 10 minutes.

I printed this to try. I don’t have an Instant Pot but will make in a casserole dish in the oven. Sounds so good.
The pressure cooker just makes it faster but you can most definitely slow roast this in the oven or even in a crock pot! That is the method I used before I got my Instant Pot as a Christmas gift a few years ago. Let me know what you think! 🙂
