Spring Lavender Simple Syrup Recipe: Sweeten Your Season
Spring is in the air. The mornings feel lighter, the days linger a little longer, and the world seems to bloom overnight. One of my favorite ways to celebrate the shift from chilly mornings to sun-dappled afternoons is with a touch of lavender. It’s floral, fragrant, and just a little magical, the perfect flavor for spring drinks.
Today, I’m sharing my go-to lavender simple syrup recipe, a small batch syrup that’s versatile, easy to make, and a springtime staple in my kitchen. You can drizzle it over tea, coffee, or even sparkling water. It’s the secret ingredient in a few of my favorite seasonal recipes.
This is the start of what I’m calling my “Lavender Haze Series”, a cluster of recipes featuring lavender in drinks and treats. Making this syrup is the first step toward sprucing up your spring beverages, from lattes to lemonade, and even cocktails.

Why Make Lavender Simple Syrup in Spring?
Lavender is naturally associated with warmer months and it brings a gentle floral note that feels refreshing rather than overpowering. While technically you could make this syrup any time of year, I love creating it in spring because:
- It captures the season, the bright, sunny flavors of spring pair beautifully with floral notes.
- It’s versatile, perfect for coffee, tea, lemonade, cocktails, and cold foam for lattes.
- It’s simple to make, all you need is sugar, water, and food-grade lavender petals.
If you’re anything like me, you want your kitchen projects to be simple yet satisfying, and this syrup hits that sweet spot.
Ingredients for Lavender Simple Syrup
Here’s what you’ll need for this small batch syrup (makes about 16 servings):
- 1 cup sugar, I like using organic cane sugar for a gentle flavor
- 1 cup water, filtered water is best for clarity and flavor
- 2 tablespoons food-grade lavender petals, these are edible flowers, so make sure they’re labeled for cooking like these.
That’s it. Just three ingredients for a syrup that will elevate your spring drinks!

Step-By-Step Instructions
Step 1: Combine Ingredients
Add sugar, water, and lavender petals to a small saucepan. Heat over low heat, stirring occasionally until the sugar dissolves completely.
Step 2: Steep the Lavender
Once the sugar is dissolved, turn off the heat and cover the pan. Let it steep for 5–10 minutes, I usually go for 10 minutes to give the syrup a richer lavender flavor.
Step 3: Strain and Store
After steeping, strain out the lavender petals using a fine mesh strainer. Pour the syrup into a clean bottle, jar, or small swing-top bottle (these are the ones I use), and store it in the fridge. It will keep for about 2–3 weeks, though it rarely lasts that long in my house.
Optional tip: Add one drop each of red and blue food coloring to the syrup and stir before storing to get a bright lavender hue in your beverages. This step is not essential as the taste will be fantastic regardless of color however if you want a little more happy in your glass, this adds a nice Spring touch.

Notes
Tips for Making the Perfect Lavender Syrup
- Use food-grade lavender, not all lavender is safe for eating. Culinary lavender has a softer, sweeter flavor than ornamental varieties.
- Don’t overheat, keep the heat low to avoid burning the sugar or making the syrup taste bitter.
- Adjust steeping time, if you prefer a lighter floral taste, steep for 5 minutes. For a more robust lavender flavor, 10 minutes works beautifully.
- Sweeten to taste, this recipe is a 1:1 sugar-to-water ratio, but you can adjust depending on how sweet you like your drinks.

How to Use Your Lavender Syrup
This syrup is incredibly versatile, making it a springtime staple in my kitchen. Here are a few of my favorite ways to enjoy it:
- Lavender Latte or Cold Foam, use it in a coffee latte for a floral twist. It pairs beautifully with milk or oat milk.
- Matcha Tea Latte, add it to your matcha latte for a subtle floral sweetness.
- Sparkling Lavender Lemonade, mix a few tablespoons with water, lemon juice, and ice. For an extra probiotic boost, you can use it in water kefir lavender lemonade.
- Cocktails, shake it into gin, vodka, or sparkling wine for a spring-inspired cocktail.
- Desserts, drizzle over pound cake, pancakes, or even yogurt for a little floral flair.
