How I Created This Easy Summer Recipe
There is a certain kind of baking day that does not start with intention. It starts with “I need to use this up.”
That is how this loaf came to be.
I had sourdough discard sitting in the fridge and a carton of strawberries that were begging to be baked into something warm and sweet. I looked to find the right sourdough strawberry quick bread recipe online but I was surprised at the lack of recipes for this creation. I pulled a recipe for regular strawberry quick bread from Sally’s Baking Addiction and made some of my own tweaks to make it with sourdough discard and also a little touch of “Bri.”
So I started mixing.
While the bread baked, I whipped up some of my strawberry simple syrup with the leftover strawberry “tops” and this recipe started to feel like something I would want to make again. I am talking not just once, but pretty much every strawberry season!

Ingredients for Sourdough Strawberry Quick Bread
Dry Ingredients
- 2 cups (250g) all-purpose flour (I used freshly milled soft white wheat)
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
Wet Ingredients
- 1 large egg, room temperature
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup sourdough discard (100% hydration)
- 1/2 cup buttermilk, room temperature (I reconstituted some powdered form I use for my ranch seasoning)
- 1/3 cup melted coconut oil or avocado oil
- 2 teaspoons vanilla extract
Fruit
- 1 1/2 cups chopped fresh strawberries (if making the strawberry syrup, don’t throw away the tops!)
- 1 tablespoon flour for tossing strawberries

How to Make Sourdough Strawberry Quick Bread
1. Prep your pan
Preheat oven to 350°F and grease an 8×4 loaf pan.
2. Mix dry ingredients
In a large bowl, whisk together flour, baking powder, baking soda, and salt. I like to use freshly milled soft white wheat flour processed in my Nutrimill grain mill.
3. Mix wet ingredients
In another bowl, whisk egg, sugars, sourdough discard, buttermilk, oil, and vanilla until smooth.
4. Combine
Pour wet ingredients into dry ingredients and gently mix until just combined. Do not overmix.
5. Fold in strawberries
Toss strawberries with 1 tablespoon flour, then gently fold into batter.
6. Bake
Pour into loaf pan and bake 55 to 70 minutes. Cover loosely with foil halfway through if needed to prevent burning the top.
Let cool in the pan for 1 hour, then transfer to a wire rack.




Strawberry Simple Syrup Glaze
This is what takes the bread from really good to I need another slice right now.
Ingredients:
- 1/2 cup powdered sugar, plus more if needed
- 1 tablespoon heavy cream or milk
- 1/4 teaspoon vanilla extract
- 2 teaspoons homemade strawberry simple syrup
Instructions:
Whisk everything together until smooth.
Add the strawberry syrup slowly, a 1/4 teaspoon at a time, until it reaches the perfect consistency. It should drizzle but still hold its shape slightly on top of the loaf.
You can omit the strawberry syrup but it really elevates the taste.. trust me. Plus you can use the leftover strawberry syrup on pancakes or waffles, in water kefir, or even in milk for a delicious drink for the kiddos!
