Simple Sourdough Garlic Toast (With Butter, Garlic, and Oregano)
There are some recipes that don’t feel like recipes at all. They’re just something you make without really thinking about it too much. Something you throw together while your main dish is in the oven, using what you already have sitting on the counter.
This sourdough garlic toast is exactly that for me.
I made it the other night with our lasagna, and it was one of those meals that just felt complete. It wasn’t necessarily fancy. Just a warm kitchen, a loaf of sourdough I had already baked, and a quick mix of butter, garlic, and oregano.
When it came out of the oven, it was golden and crisp on the edges, soft in the center, and full of that simple, delicious flavor that makes everyone reach for one more piece! Seriously, I will have to make more next time because they went that fast!
It’s the kind of thing you’ll start making once and then finding yourself making it all the time!

Why This Sourdough Garlic Toast Works So Well
There’s a reason this is one of those recipes you’ll keep coming back to.
First, it uses simple ingredients. Just butter, garlic, oregano, and good sourdough bread. Nothing complicated or hard to find. It is ready in minutes making it great for busy weeknights.
Second, the high heat makes all the difference. Baking it hot gives you that crisp outside while the butter melts down into the bread.
And third, it’s flexible. You don’t need exact measurements. You can adjust everything based on what you like or what you have.
It’s simple in the best way!
Ingredients
- Sourdough bread, sliced
- Butter, softened
- Fresh garlic, minced
- Dried oregano
That’s all you need.

If your sourdough is homemade, even better. This is one of my favorite ways to use up a loaf from earlier in the week. If you need one, I always use my homemade sourdough bread recipe here.

How to Make Sourdough Garlic Toast in the Oven
Preheat your oven to 425 to 450°F. A hotter oven is what gives you that crispy, golden finish.
In a small bowl, mix together the softened butter, minced garlic, and oregano. You want everything evenly combined so each bite has a little bit of everything.
Lay your sourdough slices on a baking sheet. Spread the butter mixture over one side of each slice using a basting brush, all the way to the edges.

Place the bread in the oven with the butter side facing up. Bake for about 6 minutes.
After that, flip each piece over and bake for another 5 to 6 minutes, until both sides are golden and crisp.
Serve warm, straight from the oven.

Tips for the Best Sourdough Garlic Toast
Use real, softened butter
Softened butter spreads easily and soaks into the bread better than melted butter. It helps everything bake more evenly.
Don’t skip the flip
Flipping halfway through helps both sides get that golden, crisp texture instead of just the top.
Go a little generous with the garlic
The flavor mellows as it bakes, so don’t be afraid to add a little extra if you love garlic.
Bake it hot
This is not a low and slow recipe. A higher temperature gives you that perfect texture.
Ways to Serve Sourdough Garlic Toast
We had this with sourdough lasagna, and it was one of those dinners where everyone immediately went back for seconds!
But this goes with just about anything:
- Pasta of any kind
- A warm bowl of soup
- A simple green salad
- Even on its own as a quick snack
It’s also a really good way to use up sourdough that’s a day or two old. If you want to keep your bread warm on the table, I found this basket warmer set that really is amazing. You put the stone in the oven to warm it and then place it in the basket. It will keep your bread nice and warm throughout dinner!

A Little Note From My Kitchen
There’s something really cozy about recipes like this. Easy to make. No long list of ingredients. Just taking what you already have and turning it into something delicious.
That’s really what I want more of in our home. Simple meals. Slower evenings. Food that brings everyone joy without a lot of stress behind it.
And honestly, this sourdough garlic toast does exactly that.
Frequently Asked Questions
Can I use store-bought sourdough bread?
Yes, absolutely. A good bakery-style sourdough works really well here. Just try to choose a loaf that’s a little hearty so it holds up to the butter.
How do I store leftover garlic toast?
If you have leftovers, let them cool completely and store them in an airtight container. You can reheat them in the oven to bring back some of that crisp texture.
Can I make sourdough garlic toast ahead of time?
You can mix the butter, garlic, and oregano ahead of time and keep it in the fridge. When you’re ready, just let it soften on the counter then spread it on the bread and bake.
What temperature is best for garlic toast?
A higher temperature, around 425 to 450°F, works best. It helps the bread crisp up quickly while the butter melts into it.
Can I add cheese?
You can!! While this version is simple, a sprinkle of mozzarella or parmesan on top before baking would be delicious.
Why is my garlic toast soggy?
This usually happens if the oven isn’t hot enough or if the bread is too thin. A higher temperature and thicker slices help prevent that.
Can I use dried garlic instead of fresh?
You can, but fresh garlic gives a much better flavor. If you’re in a pinch, dried will still work.
