When the crust is too bulky, it overwhelms the toppings, and sometimes you just want the toppings to shine. That drizzle of good olive oil, melty cheese, roasted tomatoes, fresh basil from the garden, and garlic. You want all of that front and center.
This recipe finally gave me everything I had been missing.

- 1¼ cups warm water, about 105 to 110°F
- ½ teaspoon active dry yeast
- 1 teaspoon honey
- ½ tablespoon fine sea salt
- 3⅓ cups all purpose flour, or bread flour, or “00” flour- I have linked my favorite below

Step by Step Instructions
1. Activate the Yeast
Stir warm water with the honey and salt. Sprinkle the yeast on top and let it sit for about 5 minutes until slightly foamy.
2. Mix and Knead
Pour into a bowl of flour, stir to combine, then knead gently for about 2 minutes. The dough will be slightly sticky, and that is what makes it airy later.
3. First Rise
Cover and let rest for 4 to 5 hours at room temperature until doubled.
4. Divide and Fold
Split the dough into two balls. Fold each piece over itself 8 times, shaping into a smooth round. Place seam side down in lightly oiled bowls, cover, and refrigerate overnight or up to a week.
The cold rise is what gives the dough incredible flavor and texture.

- Remove dough from the fridge 1 hour before baking.
- Preheat oven to 550°F with a pizza stone (this brand is fantastic and comes with a free pizza peel!) or upside down baking sheet.

- Stretch the dough on your knuckles until it reaches 10 to 12 inches.
- Add toppings, then slide onto the hot stone.
